- 180 g wheat noodles Contains gluten.
- 70 g peanut butter or peanut paste Contains peanuts.
- 30 ml soy sauce Contains soy and usually wheat/gluten unless specifically labeled otherwise.
- 20 ml lime juice
- 1 garlic clove
- 8 g fresh ginger
- 10 g maple syrup or sugar, optional
- 60 ml water Add gradually to loosen the sauce.
- 20 g scallions or cilantro, optional
Cooking method
Pan
- Cook the noodles
Cook the wheat noodles according to the package directions, then drain and rinse briefly if they are sticking.
- Mix the sauce
Whisk peanut butter or peanut paste with soy sauce, lime juice, grated garlic, ginger, optional sweetener and water.
- Warm gently
Warm the sauce in a pan over low heat just until smooth. Add more water if it is too thick.
- Toss
Add the noodles and toss until evenly coated in the peanut sauce.
- Finish
Serve with scallions or cilantro. This recipe intentionally does not include sesame oil.
