  • 120 g mixed vegetables
  • 40 g spring onion
  • 20 ml neutral oil
  • 20 ml soy sauce Contains soy and may contain wheat/gluten.

Cooking method

Pan

  1. Prepare the rice

Break up clumps of chilled cooked rice with your fingers or a spoon.

  2. Cook the egg

For the classic version, scramble the eggs in a hot oiled pan, then transfer them to a plate. Skip this step for the vegan version.

  3. Stir-fry the vegetables

Add more oil if needed, then cook the garlic, mixed vegetables and spring onion until hot.

  4. Add rice

Add the rice and stir-fry until the grains are hot and separate.

  5. Season

Add soy sauce and toss well. Return the egg to the pan for the classic version.

  6. Serve

Taste and add a small pinch of salt only if needed.

Frequently asked questions

Which version should I choose if I avoid egg?

Choose the vegan version. It removes the scrambled egg and uses extra vegetables.

Is this fried rice soy-free or gluten-free?

No. Both versions use soy sauce, which contains soy and may contain wheat/gluten.

Why use chilled rice?

Chilled cooked rice is drier, so it fries into separate grains instead of clumping.

Is this a regional Chinese recipe?

No. It is a practical home fried rice inspired by Chinese-style stir-frying.
